Jerusalem artichoke contains soluble dietary fiber "inulin" and insoluble dietary fiber.
"Inulin" is also called natural insulin and is said to suppress blood sugar rise and fat absorption.
Fructooligosaccharides, a component of Jerusalem artichoke, serve as food for beneficial bacteria such as bifidobacteria and lactic acid bacteria in the intestines, and are also said to be a superfood because they contain many antioxidant polyphenols, minerals and vitamins such as selenium, potassium, and zinc. It contains 10 times more soluble dietary fiber than burdock.
How to use
1) Eat as is, eat with miso soup, milk, yogurt, or add to curry or stew.2) Add to mayonnaise, ketchup, yakiniku sauce, dressing, etc., and use in dishes with high carbohydrate and fat content.
